Whip up an impressive smoked salmon quinoa salad for effortless entertaining.
Ingredients:
  • 40.00 ml red wine vinegar
  • 250g packet microwave red quinoa
  • 125.00 gm crème fraiche
  • 20.00 ml chopped fresh dill sprigs
  • 10.60 gm lemon juice
  • 120g packet French baby kale
  • 200g smoked salmon slices
  • 2 Lebanese cucumbers, cut into ribbons
  • 1 lemon, sliced
  • 40.00 ml pepitas
Instructions:
  • Combine the onion and vinegar in a small bowl, season with salt, and let it sit for 20 minutes.
  • Prepare quinoa as instructed on the packet. Allow to cool for 10 minutes before proceeding.
  • Mix together the crème fraiche, fresh dill, and zesty lemon juice in a small bowl. Season the delightful mixture with a pinch of salt and a crack of black pepper for an extra touch of flavor.
  • Separate the onion from the vinegar. Mix the pickled onion, kale, salmon, quinoa, cucumber, and lemon slices in a large bowl. Serve on plates. Drizzle with the reserved vinegar. Add dollops of dill mixture, sprinkle with pepitas, and finish with a drizzle of oil before serving.
