Smoked salmon bagels with herbed scrambled eggs

Elevate scrambled eggs with a blend of fresh herbs like dill or basil.
Ingredients:
  • 12 eggs
  • 250ml Original Cream For Cooking, a cream alternative
  • 40.00 ml finely chopped chives
  • 40.00 ml finely chopped flat-leaf parsley
  • 6 poppy-seed bagels, split
  • 12 smoked salmon slices
  • Dill sprigs, to serve
Instructions:
  • Whisk eggs and cream gently in a large bowl using a fork or balloon whisk. Season with salt and pepper.
  • In a large heavy-based frying pan, melt the butter over low heat until foaming. Pour in the egg mixture and gently push it around with a flat-edged wooden spoon, making sure to scrape the spoon along the pan's base in all directions to prevent sticking. Cook for 5-7 minutes until three-quarters of the eggs are set and the mixture is creamy. Remove from heat and fold in the chives and parsley gently.
  • Preheat the grill to high while placing the bagels, cut-side up, on an oven tray. Toast under the grill for about 2 minutes until golden brown.
  • Place slices of smoked salmon on each bagel, followed by a generous spoonful of scrambled eggs. Serve promptly with a optional sprig of fresh dill.
