Indulge in a vibrant smoked salmon salad bagel bursting with fresh flavors.
Ingredients:
  • 4 bagels
  • 1 ripe avocado
  • 250.00 ml wild rocket leaves
  • 1 tomato, thinly sliced
  • 1/2 Lebanese cucumber, thinly sliced
  • 16-24 slices smoked salmon (depending on size)
  • 1/2 small red onion, thinly sliced
  • 20.00 ml red wine vinegar
Instructions:
  • Preheat the grill to high. Split the bagels and toast until lightly golden. Plate 2 halves on each serving plate.
  • Cut the avocado in half, remove the pit, then scoop out the creamy flesh to generously spread on your delicious bagels.
  • On each bagel half, layer rocket, followed by tomato and cucumber slices. Finish by topping with 2-3 slices of smoked salmon and red onion.
  • Combine the red wine vinegar and olive oil in a small bowl, whisking until blended.
  • Pour the dressing generously over the bagels, then sprinkle with a pinch of salt and freshly ground black pepper. Serve right away to enjoy!
