Wholesome kale, cannellini beans, and cherry tomatoes in zesty lemon dressing make a convenient and delicious salad for the whole week!
Ingredients:
  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon minced shallot
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 cup extra-virgin olive oil
  • 5 pint-sized jars with lids
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 20 cherry tomatoes, halved
  • 8 cups stemmed kale, cut into ribbons
  • 1 pinch salt
  • 5 tablespoons freshly grated Parmesan cheese
Instructions:
  • Combine lemon juice, red wine vinegar, finely chopped shallot, salt, and pepper in a medium bowl. Gradually stream in olive oil while whisking continuously until a smooth dressing is achieved.
  • Arrange the jars in a neat line. Distribute beans evenly among the jars. Drizzle approximately 1 1/2 tablespoons of dressing over the beans. Place 8 tomato halves in each jar.
  • Season the kale with salt and gently massage until the leaves are just softened and vibrant green, for 20 to 30 seconds. Distribute the kale evenly into the jars, pressing down firmly to remove any air bubbles.
  • Sprinkle 1 tablespoon of Parmesan cheese onto each salad. Cover the jars and store in the fridge. Pour the salad into a bowl and toss before serving.
