Whip up a tasty veggie-packed meal with kohlrabi, kale, mushrooms, and cannellini beans.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 0.25 teaspoon red pepper flakes
  • 1 bunch kale, stemmed and coarsely chopped
  • 1 cup chicken broth
  • 2 kohlrabi - peeled, halved, and sliced
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 12 ounces baby portobello mushrooms, sliced
  • salt and ground black pepper to taste
Instructions:
  • In a 12-inch saute pan over medium-high heat, warm the oil. Cook garlic and red pepper flakes until fragrant, approximately 30 seconds. Then, add kale to the pan and toss.
  • Add the broth and lower the heat to medium. Place the kohlrabi in the pot, cover, and simmer until tender, about 5 to 7 minutes.
  • Transfer the beans and mushrooms into the pan. Raise the heat to medium-high and sauté until the liquid evaporates and the mushrooms are tender, about 5 to 7 minutes. Season generously with salt and pepper.
