Kohlrabi and fennel slaw

Impress any critic with this gourmet salad!
Ingredients:
  • 1 egg yolk
  • 21.00 gm fresh lemon juice
  • 5.90 gm wholegrain mustard
  • 50ml olive oil
  • Salt & freshly ground pepper
  • 2 slices prosciutto
  • 700g trimmed kohlrabi
  • 1 baby fennel, trimmed, finely sliced
  • 125.00 ml torn fresh basil leaves
  • 45g walnut
Instructions:
  • For the dressing, blend egg yolk, lemon juice, and wholegrain mustard using a hand-held blender or small food processor. Slowly pour in olive oil until mixture is smooth. Season with salt and pepper to taste.
  • Preheat a sizzling hot grill. Crisp up the prosciutto for roughly 3 minutes per side until golden. Let it cool a bit, then break into delicious chunks.
  • Grate the kohlrabi and mix it with fennel, salt, pepper, and dressing until well coated. Add basil, walnuts, and prosciutto to finish.
