Savory roasted red potatoes and kohlrabi tossed with garlicky garlic scape.
Ingredients:
  • 1 large kohlrabi bulb, peeled and cut into cubes
  • 6 small red potatoes
  • 2 teaspoons grated garlic scape
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C).
  • Boil lightly salted water in a small pot. Cook kohlrabi cubes in the boiling water until soft, approximately 15 minutes. Drain the cubes.
  • Microwave red potatoes until tender, approximately 10 minutes.
  • Combine kohlrabi, potatoes, and garlic scape in a bowl and blend with an electric hand mixer until creamy. Spoon the mixture into a 1-quart casserole dish and sprinkle mozzarella cheese on top.
  • Bake until the cheese is bubbly and golden brown, approximately 30 minutes in the preheated oven.
