Fluffy, healthier mashed potatoes with celeriac or turnips, cooked in flavorful broth with fresh herbs and spices.
Ingredients:
  • 3 pounds turnips, peeled and cut into 2-inch cubes
  • 1 (32 ounce) carton low-sodium vegetable broth
  • 0.25 cup olive oil
  • 0.33333334326744 cup low-fat milk
  • 1 teaspoon za'atar
  • 1 tablespoon fresh mint leaves
Instructions:
  • Place turnips and broth in a large saucepan. Add water if needed to cover the vegetables. Bring to a boil, then lower heat and simmer covered until tender, for 20 to 30 minutes.
  • After draining, return the vegetables to the pan and generously drizzle with oil. Allow to stand for 2 to 3 minutes.
  • Heat 1/3 cup of milk in a saucepan until warm. Mash turnips until fluffy, then mix in warm milk, salt, za'atar, and pepper. Add more milk if needed. Sprinkle with fresh mint before serving.
