Ingredients:

1 large sweet potato
2 ounces cream cheese, softened
2 tablespoons salted butter

Instructions:

Pierce sweet potato on all sides with a fork, making at least 4 sets of holes on each side.
Microwave the potato on high for 8 minutes, then flip and microwave until tender, about 8 minutes.
Cut the potato in half and scoop out the soft flesh into a bowl. Mash it with a fork and blend in cream cheese and butter.
