Mashed Sweet Potatoes in the Microwave

Quick and creamy microwave sweet potato mash with rich cream cheese.
Ingredients:
  • 1 large sweet potato
  • 2 ounces cream cheese, softened
  • 2 tablespoons salted butter
Instructions:
  • Pierce sweet potato on all sides with a fork, making at least 4 sets of holes on each side.
  • Microwave the potato on high for 8 minutes, then flip and microwave until tender, about 8 minutes.
  • Cut the potato in half and scoop out the soft flesh into a bowl. Mash it with a fork and blend in cream cheese and butter.
