Slow-Cooker Barbecue Beef Short Ribs

Tender beef short ribs cooked in sweet-and-spicy BBQ sauce until fall-off-the-bone, served with creamy mashed potatoes.
Ingredients:
  • 4 to 4 1/2 lb bone-in beef short ribs, cut into individual ribs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 3/4 cup Annie's™ Naturals organic sweet & spicy BBQ sauce
  • 2 tablespoons whole grain mustard
  • Sliced green onions, if desired
  • Betty Crocker™ creamy butter mashed potato mix, prepared as directed on package, if desired
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Heat a 12-inch nonstick skillet over medium-high heat. Season the ribs with salt and pepper, then brown them in two batches for 2 to 3 minutes per side. Transfer the ribs to the slow cooker and remove any excess fat and drippings.
  • Combine beef broth, 1/2 cup of barbecue sauce, and mustard in a small bowl. Pour the mixture over the ribs in a slow cooker. Cover and cook on Low for 8 to 9 hours until tender.
  • Using a slotted spoon or tongs, transfer the ribs to a serving platter. Warm the remaining 1/4 cup barbecue sauce in a microwave-safe bowl, covered, on High for 30 to 60 seconds until heated. Brush the ribs with the warm barbecue sauce, top with sliced green onions, and serve with mashed potatoes.
