Slow-Cooker Barbecue Beef Sandwiches

Effortlessly savor mouthwatering slow cooker barbecue beef without endless grilling.
Ingredients:
  • 3 pounds beef boneless chuck roast
  • 1 cup barbecue sauce
  • 1/2 cup peach or apricot preserves
  • 1/3 cup chopped green bell pepper
  • 1 tablespoon Dijon mustard
  • 2 teaspoons packed brown sugar
  • 1 small onion, sliced
  • 12 kaiser or hamburger buns, split
Instructions:
  • Prepare the beef by trimming excess fat and cutting it into 4 pieces, then transfer it into a 4- to 5-quart slow cooker.
  • Combine all remaining ingredients, except for the buns, and pour the mixture over the beef. Cover and cook on low heat for 7 to 8 hours, or until the beef is tender.
  • Transfer the beef to a cutting board. Slice thinly and add back to the cooker.
  • Continue to simmer gently for an additional 20-30 minutes until the beef is heated through. Load up the buns with the flavorful beef filling. Note: This recipe has been specifically tested with slow cookers featuring heating elements on the side and bottom; adjust accordingly if your slow cooker only has a heated base.
