Slow-Cooker Barbecue Beef Sandwiches wtih Coleslaw

Hearty beef filling with coleslaw and rice, perfect for potlucks!
Ingredients:
  • 1 1/2 pounds beef boneless round steak
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 2 cups coleslaw mix or shredded cabbage
  • 1 medium onion, coarsely chopped (1/2 cup)
  • 1/4 cup uncooked regular long-grain rice
  • 1/2 cup barbecue sauce
  • 1/2 cup water
  • 10 sandwich buns
Instructions:
  • Grease a 3- to 3 1/2-quart slow cooker. Cut beef into 3-inch pieces and season with salt and pepper.
  • Combine coleslaw mix, onion, rice, barbecue sauce, and water in a large bowl. Transfer the beef and coleslaw mixture into the slow cooker.
  • Slow cook on Low heat for 8 to 10 hours. Fill buns with beef mixture before serving. Enjoy with sliced red onions and extra barbecue sauce, if preferred.
