Slow-cooked beef short ribs with a delicious plum BBQ twist.
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 lb beef short ribs
  • 1 large sweet onion (Bermuda, Maui or Spanish), cut in half, sliced
  • 1 bottle (12 oz) chili sauce
  • 3/4 cup plum preserves
  • 2 tablespoons packed brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Worcestershire sauce
  • 1/4 teaspoon ground cloves
Instructions:
  • Heat oil in a 12-inch skillet over medium-high heat. Cook ribs in the oil, in batches if needed, for 8 to 10 minutes, turning occasionally, until browned on all sides.
  • Prepare the slow cooker by spraying it with cooking spray. Place the onion and ribs in the slow cooker. Cook on Low heat setting for 4 to 5 hours.
  • Cook the rest of the ingredients in a 2-quart saucepan over medium heat for 15 to 20 minutes, stirring often, until the sauce thickens.
  • Remove any excess liquid from the slow cooker. Pour the sauce over the ribs. Turn the heat setting to High, cover, and cook for an additional 25 to 35 minutes until hot.
