Oven-roasted vegan breakfast hash with okra and kohlrabi - a flavorful and nutritious breakfast bowl.
Ingredients:
  • aluminum foil
  • 1 kohlrabi bulb, peeled and diced
  • 0.5 onion, sliced
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil, divided
  • 1 pound frozen okra, thawed
  • 4 tablespoons cornmeal
  • 1 teaspoon ground black pepper
  • 0.25 cup sunflower seeds
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and line a baking sheet with aluminum foil, then give it a quick spray of cooking spray.
  • In a bowl, toss together kohlrabi, onion, paprika, and garlic powder until evenly mixed. Drizzle with 1 tablespoon of olive oil and stir to coat everything evenly.
  • Transfer the okra to a separate bowl and generously drizzle with the remaining 1 tablespoon of olive oil. Mix thoroughly before adding the cornmeal, salt, and pepper.
  • Divide the okra mixture and kohlrabi-onion mixture evenly on the prepared baking sheet.
  • Place the okra and kohlrabi mixtures on separate sides of a baking sheet and bake in a preheated oven for 25 minutes. Continue baking until the okra is crispy and the kohlrabi is brown and tender, for an additional 20 to 25 minutes. Once done, combine the okra and kohlrabi, then mix in the sunflower seeds. Enjoy!
