Succulent okra and bacon rice dish with sautéed onions.
Ingredients:
  • 1 pound bacon
  • 1 large onion, chopped
  • 3 cups sliced fresh or frozen okra
  • 1 (14.5 ounce) can chicken broth
  • 1 cup uncooked rice
  • 1.5 cups water
Instructions:
  • Fry bacon in a large, deep skillet over medium-high heat until crispy, about 7 to 9 minutes. Reserve 1 tablespoon of the bacon grease in the skillet. Crumble the bacon and set aside.
  • In a skillet, sizzle the reserved bacon grease over medium-high heat. Sauté onion until tender, around 3 minutes. Stir in crumbled bacon, okra, and chicken broth. Simmer on low until the okra is soft and breaking down, for about 15 minutes.
  • Place the rice in the skillet and add water. Cover and cook until the rice is fluffy, approximately 20 minutes.
