Tender beef sirloin cooked in a savory Middle Eastern tomato-okra sauce, perfect with fluffy rice.
Ingredients:
  • 0.66666668653488 cup olive oil
  • 1 tablespoon salt
  • 1 pound beef top sirloin, cut into 1-inch cubes
  • 0.5 large onion, chopped
  • 6 cloves garlic, minced
  • 2 (10 ounce) cans tomato sauce
  • 1 tablespoon tomato paste
  • 1 (10 ounce) package frozen okra, thawed
  • 1.5 tablespoons ground coriander
  • 1 teaspoon ground white pepper
  • 2 teaspoons ground cumin
  • salt to taste
  • 1 jalapeno pepper, thinly sliced
Instructions:
  • In a large pot over high heat, heat olive oil. Season steak cubes with 1 tablespoon of salt. Sear the seasoned meat in the hot oil with onion and garlic for about 5 minutes until it is seared; then, reduce the heat to medium and continue cooking and stirring until the meat is browned, about 3 more minutes. Set aside the steak pieces.
  • Combine tomato sauce, tomato paste, okra, water, coriander, white pepper, and cumin in a pot. Bring to a boil, season with salt, and simmer on low for 30-45 minutes until okra is tender. Add the beef pieces back in and simmer for another 10 minutes for flavors to meld. Garnish with slices of jalapeno pepper before serving.
