Slow-cooked vegetable beef soup with okra and canned tomatoes for an easy, flavorful winter meal.
Ingredients:
  • 0.25 cup onion, chopped
  • 1 (16 ounce) package frozen mixed vegetables
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (14.5 ounce) can Italian diced tomatoes, drained
  • 2 potatoes, peeled and chopped
  • 1 cup sliced fresh or frozen okra
  • 1 tablespoon ketchup
  • water
Instructions:
  • Brown the ground beef and onion in a skillet over medium heat until the beef is cooked through and the onion is soft. Remember to drain any excess grease.
  • Add the seasoned beef and onions into a slow cooker. Mix in frozen vegetables, diced tomatoes, Italian diced tomatoes, potatoes, okra, ketchup, salt, and pepper. Pour in water until everything is covered.
  • Simmer gently, covered, for 4 hours on Low heat.
