Delicious Southern dish with okra, rice, bacon, and bell pepper known as Limpin' Susan.
Ingredients:
  • 4 slices of bacon (about 5 ounces), chopped
  • 1 cup chopped yellow onion
  • 1/2 cup chopped green bell pepper
  • 2 cups okra, sliced into disks, 1/2 to 3/4-inch thick, fresh or frozen (thawed)
  • 1/4 teaspoon cayenne, or to taste
  • 1 teaspoon Kosher salt (use less salt if using seasoned stock)
  • 1 cup long-grain rice
  • 1 3/4 cup chicken stock, see recipe note
Instructions:
  • Cook the chopped bacon in a pot over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon fat in the pot.
  • Sauté the onion and green pepper for 2 to 3 minutes.
  • In a sizzling pan, introduce the vibrant okra, crank up the heat. Sprinkle in the fiery cayenne, savory salt, and rice, then stir-fry for a minute.
  • Pour in the chicken stock, cover the pot, and simmer gently until the rice is tender, approximately 20 minutes.
  • Fluff the rice with a fork and gently fold in the chopped bacon.
