Crispy fried okra and onion patties in a savory cornmeal coating, a classic Southern treat.
Ingredients:
  • 3 cups vegetable oil for frying
  • 1 pound okra, finely chopped
  • 1 cup finely chopped onion
  • 0.25 teaspoon pepper
  • 0.5 cup water
  • 1 egg
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 cup cornmeal
Instructions:
  • In a large skillet, heat a 1-inch layer of oil to 375°F (190°C).
  • Mix the okra, onion, salt, pepper, water, and egg in a large bowl. Add the flour, baking powder, and cornmeal to the mixture and stir until combined.
  • Spoon dollops of the okra batter into the sizzling oil, frying until golden on both sides, approximately 2 minutes each. Transfer to paper towels to drain after using a slotted spoon.
