Southern-style tomato, onion, grits, and okra fritters - a crispy and flavorful family favorite.
Ingredients:
  • 2 pounds fresh okra, sliced in 1/8 inch pieces
  • 1 large tomato, diced
  • 1 onion, diced
  • 6 packets instant grits
  • 2 eggs, lightly beaten
  • 0.5 cup oil for frying, or as needed
Instructions:
  • In a large bowl, mix okra, tomato, and onion together. Add grits, eggs, salt, and pepper, and blend the mixture well using your hands. Shape into 2 1/2-inch-wide patties, slightly smaller than a hamburger.
  • Warm oil in a cast iron skillet over medium-high heat. Cook fritters until golden brown, approximately 5 minutes. Turn with a spatula and continue cooking until browned on the other side, around 5 more minutes. Drain on paper towels and serve hot.
