Grilled Okra and Grape Tomatoes Skewers: Perfect for summer cookouts.
Ingredients:
  • 32 okra pods
  • 32 grape tomatoes
  • 1/2 teaspoon salt-free Cajun seasoning
  • 1 tablespoon canola oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
Instructions:
  • Immerse 8 (8-inch) wooden skewers in water and let them rest for 30 minutes.
  • Preheat your outdoor grill to a fiery high heat of 400 to 450 degrees F (200 to 230 degrees C) and lightly oil the grill.
  • Skewer 4 okra pods and 4 grape tomatoes on each soaked skewer. Combine Cajun seasoning and canola oil in a small bowl. Brush the mixture onto the okra and tomatoes, then season with kosher salt and black pepper.
  • Grill vegetable skewers until okra is vibrant green and tender with grill marks, 6 to 8 minutes. Then, transfer okra and tomatoes from skewers to a serving bowl.
