Ready in an hour! Grilled sausage and veggie salad with tangy vinegar dressing - a hearty delight.
Ingredients:
  • 1 package (12 oz) fully cooked chicken sausage
  • 1 tablespoon olive oil
  • 3 1/2 cups water
  • 1 lb okra, rinsed, ends removed
  • 4 medium plum (Roma) tomatoes, quartered
  • 1 cup red wine vinegar dressing
  • 4 slices bacon, cut into 1/2-inch pieces
  • 4 cups mixed salad greens (from a 5-oz bag)
  • 1/4 cup chopped fresh basil
  • 8 green onions, sliced (1/2 cup)
Instructions:
  • Preheat the gas or charcoal grill.
  • Oil the sausages and season with pepper, then grill over medium heat, covered, for 12 to 14 minutes, turning occasionally until browned and cooked through. Let them rest for about 10 minutes before slicing diagonally into 1/2-inch pieces.
  • In a 2-quart saucepan, bring water and salt to a boil over high heat. Add okra and cook for 2 to 3 minutes until crisp-tender. Drain and rinse with cold water to cool thoroughly. Drain well before using.
  • Toss okra and tomatoes in 1/2 cup of the dressing in a medium bowl. Transfer the vegetables to a grill basket or place them directly on the grill rack, while setting aside the remaining dressing for later use.
  • Start by preheating your grill to medium heat and placing a grill basket on it. Next, grill the vegetables for 5 minutes, brushing them with the reserved dressing. Continue grilling for another 5 to 10 minutes until the vegetables are tender. Finally, let the grilled vegetables cool for 10 minutes before serving.
  • In a 10-inch skillet, crisp up the bacon over medium heat for 8 to 10 minutes, stirring occasionally. Once it's nice and crispy, drain it on paper towels, crumble it, and set it aside.
  • Arrange salad greens on 4 individual serving plates, then layer with sausage and grilled vegetables. Drizzle each plate with the remaining 1/2 cup dressing and garnish with basil, onions, bacon, and pepper. Serve immediately.
