Kohlrabi Ham Bake

Savory kohlrabi and ham casserole with creamy eggs.
Ingredients:
  • 3 tablespoons butter
  • 4 kohlrabi, peeled and diced
  • 8 ounces thick ham, diced
  • 2 tablespoons fresh parsley, chopped
  • 3 egg yolks
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Pinch mace (can substitute ground nutmeg)
  • Salt and freshly ground black pepper
Instructions:
  • In a large skillet over medium heat, sauté diced kohlrabi in butter for 8 to 10 minutes, until tender.
  • Combine the egg yolk with heavy cream, flour, mace, salt, and pepper, blending until smooth.
  • Create layers in the casserole dish starting with half of the cooked kohlrabi, followed by diced ham and parsley. Add the remaining kohlrabi on top and drizzle the sauce over everything.
  • Bake at 350°F for 30-35 minutes until top is lightly browned. Serve hot. From a recipe in Russian, German & Polish Food & Cooking by Leslie Chamberlain.
