Whip up a quick and tasty chickpea tomato salad for a nutritious and wallet-friendly meal. Ready in just 5 minutes!
Ingredients:
  • 125g cherry tomatoes, halved
  • 2 celery sticks, finely chopped
  • 40.00 ml fresh continental parsley leaves, chopped
  • 1 baby cos, leaves separated
  • 2 eggs, soft-boiled or hard-boiled, peeled
  • 4.60 gm extra virgin olive oil
  • 10.60 gm fresh lemon juice
Instructions:
  • Mix together the tomato, chickpeas, celery, and parsley in a bowl.
  • Distribute the crisp lettuce leaves evenly into 2 beautiful bowls. Spoon over the flavorful chickpea mixture and add a perfectly cooked egg on top. Enjoy!
  • Whisk together olive oil and lemon juice, then generously drizzle the dressing over the salad. Finish with a sprinkle of freshly ground black pepper to taste.
