Sautéed Baby Kale with Caramelized Onions, Pine Nuts, and Golden Raisins - a simple and delicious Italian-inspired creation.
Ingredients:
  • 0.25 cup pine nuts
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 clove garlic, minced
  • 1 pound baby kale
  • salt and ground black pepper to taste
  • 0.25 cup golden raisins
Instructions:
  • Toast pine nuts in a skillet over medium-high heat, stirring constantly, for about 2 minutes until fragrant.
  • In a large skillet over medium heat, sauté onion in oil until starting to brown, about 5 minutes. Add garlic and cook for another minute. Add baby kale gradually, stirring until wilted. Cover and cook for 3 to 4 minutes until kale is hot. Season with salt and pepper.
  • Take the mixture off the heat and gently mix in the toasted pine nuts and golden raisins. Allow it to cool for about 5 minutes before serving.
