Sautéed Lacinato kale with garlic and olive oil, paired with tender poached baby potatoes.
Ingredients:
  • 2 cups vegetable or chicken stock (use vegetable stock for vegan option)
  • 2 cups water
  • 1 pound baby potatoes, various colors
  • 3 tablespoons extra virgin olive oil, divided
  • 1 pound dinosaur kale or Swiss chard, chopped roughly
  • 3 garlic cloves, chopped
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper
  • Grated zest from one lemon
  • Lemon juice to taste
Instructions:
  • Simmer the potatoes in a flavorful broth until tender, about 20-30 minutes. Drain and toss with 1 tablespoon of olive oil, season generously with salt, and set aside. Optional: save the broth for future use in making rice or polenta.
  • Heat the remaining olive oil in a large sauté pan over medium-high heat. Stir-fry kale until wilted. Add garlic, red pepper flakes, salt, and black pepper, and continue to stir-fry for 2 minutes. Cover the pan, turn off the heat, and let it sit for 2-4 minutes before uncovering.
  • Sprinkle the kale with lemon zest and create a bed of kale on the plate with baby potatoes in the middle. Drizzle lemon juice over the dish just before serving.
