Dinosaur cake

Excite the little ones with a delicious and fun dinosaur cake!
Ingredients:
  • Melted butter, to grease
  • 500.00g butter, chopped, at room temperature
  • 315g (1 1/2 cups) caster sugar
  • 17.60 gm vanilla essence
  • 8.00 eggs, at room temperature
  • 190g (1 1/4 cups) self-raising flour, sifted
  • 190g (1 1/4 cups) plain flour, sifted
  • 185ml (3/4 cup) milk
  • 250g butter, at room temperature
  • 380g (2 1/2 cups) icing sugar mixture
  • 60ml (1/4 cup) milk
  • 20 drops blue food colouring
  • 30 spearmint leaf lollies
  • 25 lime-coloured mint Mars M&M's
  • 25 dark-green-coloured mint Mars M&M's
  • 1 red Smartie
  • Licorice strap, cut into thin strips
Instructions:
  • Preheat oven to 180°C and position a shelf in the second lowest spot. Brush a 24 x 30cm rectangular cake pan (with a 3.5cm depth) with melted butter to lightly grease. Line the pan with non-stick baking paper on the base and sides.
  • In a large bowl, use an electric beater to whip up a pale and creamy mixture of butter, sugar, and vanilla. Add the eggs one at a time, making sure to beat well after each addition. Gently combine the flour and milk into the butter mixture using a large metal spoon. Transfer the mixture into a prepared pan and smooth the surface with the back of a spoon.
  • Bake in the oven for 35-40 minutes or until a skewer inserted into the center comes out clean. Allow the dish to rest in the pan for 10 minutes to cool slightly before transferring to a wire rack to cool completely.
  • Prepare a second cake. Let it cool.
  • Begin by positioning 2 cakes on a clean work surface. Trim 1 long side of each cake using a large serrated knife. Next, place the cut sides together. Place the template on top of the cakes and carefully cut out the dinosaur shape using a small sharp knife (refer to notes for guidance).
  • For the butter cream icing, use an electric beater to whip the butter until light and creamy. Slowly incorporate the icing sugar and beat until fully blended. Gradually mix in the milk and beat until fluffy.
  • Secure the cakes to a cake board or serving platter by gently adding a dollop of icing to their bases.
  • Transfer the remaining icing to a large bowl, mix in the food coloring until fully combined, then generously spread it over the entire cake to coat it completely.
  • Line up the spearmint leaf lollies along the top edge of the dinosaur, overlapping slightly, running from the tail to the top of the head. Scatter the M&M's over the body of the dinosaur, and position the red Smartie on the head to create the eye.
  • Use licorice strips to create the dinosaur's feet and mouth.
