Dinosaur cake recipe

Ingredients:
  • 3 x 585g chocolate mud cakes, chilled
  • 168g pkt Flake chocolate sharepack
  • 45g (1/2 cup) desiccated coconut
  • 8-10 drops of green liquid food colouring
  • 1 waffle ice-cream cone
  • 1 chocolate biscuit
  • 15.20 gm dark choc bits
  • 3 dark chocolate Balls
  • 40g Maltesers
  • 3 spearmint lolly leaves
  • 400g dark chocolate, broken into pieces
  • 300ml ctn thickened cream
Instructions:
  • For the chocolate ganache, finely chop the chocolate in a small food processor. Heat the cream in a small saucepan until it almost boils. With the processor running, pour the hot cream into the chocolate until smooth. Chill in the fridge, stirring occasionally, until thickened (10-15 minutes).
  • Next, stack one cake with the iced side up on a round cake board or serving platter. Then, place the second cake with the iced side down on top and gently press down to secure them together.
  • Place the leftover cake on a cutting board. Trim the top of the cake with a serrated knife to remove the icing, then discard the icing. Using an 11-12cm round bowl or plate as a guide, cut out a smaller disc of cake. Place the disc, cut-side down, on top of the stacked cake.
  • Set aside 2 tablespoons of chocolate ganache. Use the rest to coat the entire cake, covering the top and sides evenly.
  • Set aside 1 Flake. Roughly chop the rest of the Flakes and firmly press them onto the sides of the bottom cake layer.
  • In a small bowl, mix coconut with food coloring until combined. Sprinkle the bottom cake layer with the green coconut to create a grassy texture.
  • Cut off the tip of the waffle cone using a serrated knife. Place the cone, cut-side up, on the smaller cake to create the volcano shape. Brush the cone with some of the reserved chocolate ganache. Finely chop the chocolate biscuit and coarsely chop 2 tsp of dark chocolate bits. Press the chopped chocolate biscuit and chocolate bits onto the side of the volcano to cover it.
  • Garnish the top of the cake around the volcano with Lindor Balls, Maltesers, and the rest of the chocolate bits.
  • Sprinkle the reserved Flake over the grass area. Drizzle a bit of reserved chocolate ganache on top of the Flake and add spearmint lolly leaves to create a tree. Finish by garnishing the cake with toy dinosaurs, artificial palm trees, and grass.
  • Trim the sparkler to sit just above the volcano, position it in the volcano, light it, and serve immediately.
