Golden brown deep-fried corned beef hash and hard-boiled eggs.
Ingredients:
  • 0.25 cup coarse-grain mustard
  • 0.25 cup Greek yogurt
  • 1 teaspoon garlic powder
  • 1 pinch cayenne pepper
  • 2 eggs, beaten
  • 2 cups instant mashed potato flakes
  • 4 hard-boiled eggs, peeled
  • 1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
  • 2 quarts vegetable oil for frying
Instructions:
  • Combine whole grain mustard, Greek yogurt, garlic powder, and cayenne pepper in a small bowl, stirring until fully combined.
  • In one shallow dish, pour 2 beaten eggs. In another shallow dish, add potato flakes.
  • Separate the corned beef hash into 4 equal portions. Shape each portion around an egg until fully covered.
  • Dip eggs in beaten egg and roll in mashed potato flakes until fully coated.
  • Bring the oil to 375 degrees F (190 degrees C in a deep-fryer or large saucepan.
  • Carefully crack the 2 eggs into the sizzling oil and fry until golden brown, which should take about 3 to 5 minutes. Use a slotted spoon to transfer the eggs onto a plate lined with paper towels. Repeat the process with the remaining 2 eggs.
  • Slice the item lengthwise and pair with zesty mustard sauce for a delicious presentation.
