Creamy chicken saute with tomatillos, chiles, and lima beans. Perfect as a side dish too!
Ingredients:
  • 3 boxes (9 oz each) frozen baby lima beans
  • 2 cups water
  • 3/4 lb green tomatillos, husks removed, rinsed
  • 1/2 cup low-sodium chicken broth
  • 2 or 3 poblano chiles, roasted, peeled, seeded, stems removed
  • 1/2 cup white onion, chopped
  • 2 medium cloves garlic, finely chopped (1 teaspoon)
  • 1 teaspoon chicken bouillon granules
  • 1/2 cup fat-free sour cream
  • 1/4 cup low-sodium chicken broth
  • 3 tablespoons cornstarch
  • 2 1/2 to 3 cups shredded cooked chicken breast
  • 2 tablespoons finely chopped fresh cilantro
Instructions:
  • Prepare the lima beans according to the instructions on the box.
  • In a 3-quart saucepan, bring water and tomatillos to a boil over medium-high heat. Simmer for 5 to 7 minutes until tomatillos change color and soften, then drain.
  • Combine the cooked tomatillos, 1/2 cup of chicken broth, poblano chiles, onion, garlic, bouillon, and 1/4 cup of lima beans in a blender. Blend on medium speed for 30 to 45 seconds until smooth.
  • In a 4-quart saucepan, simmer the tomatillo mixture over medium heat for 10 minutes until thickened. Mix in sour cream and the rest of the lima beans. In a small bowl, combine 1/4 cup chicken broth with cornstarch until smooth, then add to the saucepan. Cook over medium-low heat for 5-8 minutes until thickened, stirring often. Add the chicken and heat through. Top with fresh cilantro and serve hot.
