Baby pak choy with chilli and black bean sauce

Tender and mild-flavored Asian green vegetable widely enjoyed in Australia.
Ingredients:
  • 18.20 gm light olive oil
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 2 garlic cloves, finely chopped
  • 1 long fresh red chilli, halved, deseeded, thinly sliced
  • 2 bunches baby pak choy
  • 60ml (1/4 cup) chicken style liquid stock
  • 51.60 gm black bean sauce
  • 20.00 ml dry sherry
Instructions:
  • 1. Heat a wok over high heat until smoking, add oil, then swirl to coat. 2. Stir-fry ginger, garlic, and chili for 1 minute until fragrant. 3. Add pak choy, stock, black bean sauce, and sherry. Cook for 3-5 minutes until pak choy wilts and sauce thickens.
  • Move the pak choy to a serving bowl and generously drizzle the sauce on top.
