Whip up adorable bear-shaped shortbread cookies topped with colorful Betty Crocker® icing for a delightful dessert.
Ingredients:
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 cup powdered sugar
  • 3 to 5 teaspoons milk
  • 1/4 teaspoon vanilla
  • 3/4 cup grated white chocolate baking bar (about 1 oz from 4-oz package)
  • 76 white vanilla baking chips, tips cut off (about 1/4 cup)
  • 76 mini semisweet chocolate chips (about 2 teaspoons)
  • 19 small round chocolate-covered creamy mints, cut in half
  • 1 pouch (7 oz) Betty Crocker™ Cookie Icing chocolate icing
Instructions:
  • Preheat the oven to 350°F. Using an electric mixer, combine butter and granulated sugar in a large bowl until light and fluffy. Mix in vanilla and salt until well combined. Gradually add flour on low speed until a soft dough forms. Shape the dough into a ball.
  • Roll out the dough on a lightly floured surface to 1/4-inch thickness. Use a 2-inch round cookie cutter to cut out 38 circles, re-rolling scraps as needed. Place the circles 2 inches apart on ungreased cookie sheets.
  • Bake for 10 to 12 minutes until edges lightly brown. Transfer to cooling racks right away. Allow to cool completely before decorating.
  • Combine powdered sugar, 3 teaspoons of milk, and vanilla in a bowl, stirring until smooth. Add more milk, if needed, 1 teaspoon at a time, until reaching desired consistency.
  • Decorate Cookies: Smoothly ice cookies with a knife. Sprinkle approximately 3/4 teaspoon of white chocolate on each. Add 2 vanilla baking chips for ears, 2 chocolate chips for eyes, and 1 mint for the nose. Use chocolate icing for the mouth.
