Colorful pencil-shaped sugar cookies with vibrant icing, a playful and irresistible treat for kids heading back to school.
Ingredients:
  • 1 cup white sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 3.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 cup heavy cream
  • 1 pinch salt
  • 0.5 cup confectioners' sugar, or as needed
  • 1 teaspoon lemon juice, or as needed
  • assorted food coloring
Instructions:
  • In a bowl, use an electric mixer to cream together white sugar and butter until smooth. Mix in eggs and vanilla extract until well combined. Sift together flour, baking powder, and salt, then stir into the creamy mixture along with heavy cream until dough is evenly mixed. Refrigerate dough for 2 to 3 hours before using.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and lay parchment paper on a baking sheet.
  • Roll cookie dough on a floured work surface, then cut into strips about 2 1/2 inches long and as thick as a pencil, tapering one end to a point. Place the "pencils" on the baking sheet.
  • Bake until golden brown, for 12 to 14 minutes in a preheated oven. Then, cool the cookies completely on a wire rack.
  • Combine confectioners' sugar and lemon juice in a bowl until a thick icing forms. Divide the icing into separate small bowls and mix in various colors of food coloring to create a vibrant palette.
  • Transform the "pencil" cookies into vibrant colored pencils by carefully drizzling them with colored icing. Wait patiently for the icing to fully set.
