Delicious savory cake pops with bacon, eggs, and cheese - perfect for a tasty brunch potluck.
Ingredients:
  • 4 eggs, divided
  • 2 cups baking mix (such as Bisquick®)
  • 1.3333333730698 cups milk
  • 2 tablespoons vegetable oil
  • 0.25 cup shredded Cheddar cheese
Instructions:
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the cooked bacon on paper towels and crumble it into small pieces.
  • Whisk 3 eggs in a small bowl until smooth, then pour into a hot skillet. Cook over medium heat, stirring occasionally, until scrambled and set, approximately 5 minutes.
  • Follow the manufacturer's instructions to preheat the cake pop maker.
  • Mix the remaining egg, baking mix, milk, and vegetable oil in a large bowl until a smooth pancake batter forms.
  • Gently mix crumbled bacon, scrambled eggs, and Cheddar cheese into the batter.
  • Pour batter into the cake pop machine wells and cook until golden brown, about 4 to 6 minutes. Repeat with the rest of the batter.
