Indulge in a gourmet bacon and egg sandwich with a drizzle of balsamic - guaranteed to upgrade your weekend and cure any hangover!
Ingredients:
  • 9.20 gm olive oil
  • 125g mini roma tomatoes, roughly chopped
  • 1 tsp balsamic vinegar
  • 4 rashers rindless bacon, halved
  • olive oil cooking spray
  • 2 eggs
  • 2 x 15cm baguette rolls, opened, flattened
  • watercress sprigs, to serve
Instructions:
  • In a non-stick frying pan over medium-high heat, heat oil. Add tomatoes and cook for 3 to 4 minutes until tender, stirring occasionally. Stir in vinegar and cook for 1 more minute. Transfer to a bowl and wipe the pan clean.
  • Preheat a frying pan over medium heat. Add bacon and cook for 4 to 5 minutes until crispy, turning occasionally. Place cooked bacon on a paper towel to drain. Using the same pan, wipe it clean with paper towel, spray with oil, and heat over medium-high heat. Crack eggs into the pan and cook for 2 minutes until the whites are set and the yolks are still runny, or cook to your preferred doneness.
  • Grill or toast bread cut side. Plate. Add bacon, egg, tomatoes. Pepper generously. Garnish with watercress. Serve.
