Elevate weeknight pasta with sour cream, fresh basil, and parmesan for a special touch.
Ingredients:
  • 375g dried cracked pepper fettuccine (San Remo brand)
  • 2 eggs
  • 40.40 gm sour lite cream
  • Salt & ground black pepper, to taste
  • 18.20 gm olive oil
  • 2 middle bacon rashers, rind removed, thinly sliced
  • 75g (3/4 cup) shredded Parmesan
  • 82.50 ml roughly chopped fresh basil leaves
Instructions:
  • Cook fettuccine in a large pot of salted boiling water according to package directions until al dente. In a small bowl, gently whisk together eggs, sour cream, salt, and pepper to a smooth consistency. Heat olive oil in a pan over medium heat, sauté garlic for 1 minute, then add bacon and cook until crisp, about 3-4 minutes, stirring occasionally. Drain bacon on paper towels.
  • After draining the fettuccine, toss it back into the saucepan and swiftly mix in the egg mixture, Parmesan, and basil. Stir gently over medium-low heat for 2-3 minutes until the sauce becomes creamy. Add the bacon and serve promptly.
