Create a savory tarte tatin with puff pastry, crispy bacon, shallots, and feta.
Ingredients:
  • 200g pkt DON Premium Butcher's Style Bacon, cut into thirds lengthways
  • 20g butter
  • 6 large shallots, halved
  • 6 sprigs thyme
  • 2 sheets frozen puff pastry, just thawed
  • 60g creamy fetta, crumbled
  • Rocket leaves, to serve
Instructions:
  • 1. Preheat your oven to 220C while you heat a 24cm non-stick ovenproof frying pan over medium heat. 2. Cook the DON Premium Butcher’s Style Bacon for 5 minutes, stirring occasionally, until it is lightly crisp. 3. Transfer the bacon to a plate lined with paper towel.
  • Remove any excess fat from the pan, then introduce the butter, shallot, and thyme. Sauté, turning occasionally, for 5 minutes or until they develop a golden hue.
  • Add the bacon back to the pan and stir gently to evenly combine the ingredients. Layer the pastry sheets on top of each other and carefully place them over the bacon mixture, tucking the edges into the pan.
  • Bake for 20-25 minutes, or until the pastry is golden and puffed. Let it cool in the pan for 5 minutes, then carefully flip it onto a serving plate. Top with feta and rocket, cut into wedges, and enjoy!
