Smoky cheese and bacon dip

Wow your guests with this irresistible bacon and cheese dip!
Ingredients:
  • 4 rashers streaky bacon
  • 1 medium brown onion, finely chopped
  • 250g light cream cheese
  • 117.50 gm light sour cream
  • 82.50 ml smoked cheddar, coarsely grated
  • 1 green onion, thinly sliced
  • Assorted vegetables (see notes), to serve
  • Crackers, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • - Heat a medium frying pan over high heat until sizzling hot. - Cook the bacon for 7 minutes, flipping occasionally, until it reaches a golden and crispy perfection. - Remove the bacon from the pan and finely chop it.
  • Sauté chopped brown onion in a pan until soft, about 7 minutes. Add minced garlic and cook for 1 more minute. Remove from heat and mix in cream cheese, sour cream, and cheddar until smooth. Stir in most of the cooked bacon. Transfer mixture to a 3-cup ovenproof dish.
  • Bake for 10 to 15 minutes until piping hot. Top the dip with fresh green onion and the extra crispy bacon. Serve alongside a variety of veggies and crackers.
