Bacon and asparagus salad

Crunchy bacon crumb side salad perfection.
Ingredients:
  • 250g rindless bacon, trimmed, chopped
  • 1 garlic clove, crushed
  • 375.00 ml fresh, multigrain breadcrumbs
  • 4 bunches asparagus, trimmed
  • 200g butter beans, topped
  • 4 eggs, at room temperature
Instructions:
  • Add the bacon to a hot frying pan and cook until crispy, stirring occasionally. Transfer to a paper towel to drain excess grease, then clean the frying pan.
  • Heat up the oil in a pan, then add the garlic and cook for 30 seconds. Next, add the breadcrumbs and cook while stirring for 3 to 4 minutes until they turn golden. Take the pan off the heat.
  • Fill a non-stick frying pan halfway with water and bring to a boil. Add the asparagus and cook for 2 minutes until just tender. Remove the asparagus with a slotted spoon and place in a bowl. Then, add beans to the boiling water and cook for 2 to 3 minutes until just tender. Drain the beans and add them to the bowl with the asparagus.
  • Boil eggs in a saucepan of bubbling water for 2 1/2 minutes. Immediately transfer to cold water. Enjoy perfectly cooked eggs.
  • Gently mix in crispy bacon and breadcrumbs with the asparagus mixture. Plate the salad, then top with halved eggs.
