Bacon and Basil Pasta Salad

Crowd-pleasing pasta salad ready in 25 minutes. Great for potlucks and picnics.
Ingredients:
  • 1 package (16 oz) penne pasta
  • 1/2 lb sliced bacon
  • 1 pint grape tomatoes, cut in half
  • 2 medium red or green bell peppers or 1 of each, chopped (2 cups)
  • 4 medium green onions, sliced (1/4 cup)
  • 1/3 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup olive oil
  • 1/2 cup chopped fresh basil leaves
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
Instructions:
  • Prepare pasta according to package instructions. Once cooked, rinse under cold water to cool and drain well.
  • Cook bacon in a 10-inch nonstick skillet over medium heat for 5 to 8 minutes until crisp. Drain on paper towels, crumble, and refrigerate until serving.
  • Combine pasta with juicy tomatoes, crisp bell peppers, and aromatic onions in a large bowl.
  • In a small bowl, whisk together vinegar and mustard until smooth. Slowly drizzle in oil while whisking continuously until well combined. Stir in basil, salt, and pepper. Pour the dressing over the pasta and toss until fully coated. Chill in the refrigerator for 2 hours before serving.
  • Sprinkle crispy bacon over the fresh salad and gently toss until well combined right before serving.
