Bacon and cheese nachos

Whip up delicious bacon and cheese nachos in under 35 minutes!
Ingredients:
  • 1 small onion, finely chopped
  • 250g Rindless Short Cut Bacon, finely chopped
  • 30g pkt taco seasoning
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 400g can red kidney beans, rinsed & drained
  • 40.00 ml sliced jalapenos, chopped (optional)
  • Corn chips, to serve
  • 80g grated cheese
  • 1 avocado, mashed, to serve
  • Sour cream, to serve
  • Fresh coriander, to serve
Instructions:
  • 1. Preheat your oven to 180C/160C fan-forced. 2. Heat oil in a large non-stick frying pan over medium heat. 3. Saute onion for 1-2 minutes until softened. 4. Add bacon and cook for 4-5 minutes until crispy and golden. 5. Sprinkle in the seasoning and cook for an additional minute.
  • Combine the tomatoes, beans, and jalapenos (if desired) into the mixture. Allow it to simmer over medium-low heat for 5-10 minutes until it thickens.
  • In heatproof serving bowls, layer half of the corn chips, followed by the bacon mixture. Top with the remaining corn chips and sprinkle with cheese. Bake on an oven tray for 5-10 minutes until the cheese melts. Finish with avocado, a dollop of sour cream, and a sprinkle of fresh coriander before serving.
