Bacon and cheese omelette

Indulge in a timeless favorite with a savory bacon and cheese omelette.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium red onion, thinly sliced
  • 100g rindless shortcut bacon, thinly sliced
  • 4 eggs
  • 20g butter
  • 62.50 ml grated tasty cheese
  • 40.00 ml fresh flat-leaf parsley leaves
  • toasted crusty bread, to serve
Instructions:
  • In a small frying pan over medium-high heat, sizzle the onion and bacon in oil until the onion turns soft and the bacon gets crisp, about 3 to 4 minutes. Transfer to a bowl and cover to keep warm.
  • In a bowl, whisk together eggs, 2 tablespoons of cold water until blended. Season with pepper and preheat the grill on high.
  • Melt half of the butter in a small frying pan over medium-high heat. Pour in half of the egg mixture and swirl the pan to evenly spread the eggs. Cook for about 1 minute until the eggs are nearly cooked. Sprinkle half of the bacon mixture and half of the cheese over the eggs.
  • 1. Under the grill, melt cheese on the omelette until lightly browned. Transfer to a plate, cover to keep warm. Repeat with the rest of the egg mixture, bacon, and cheese. Serve with toasted crusty bread.
