Savory stovetop omelette packed with veggies, turkey bacon, and cheese, ideal for a satisfying meal for 1 or to share with a loved one.
Ingredients:
  • 2 teaspoons butter
  • 1 portobello mushroom, sliced
  • 2 strips turkey bacon, chopped
  • 0.25 cup chopped green bell pepper
  • 2 tablespoons chopped onion
  • 2 tablespoons shredded sharp Cheddar cheese
  • 3 eggs
  • salt and ground black pepper to taste
Instructions:
  • In a nonstick skillet over medium-high heat, melt butter until sizzling. Add in mushroom slices, turkey bacon, green pepper, and onion. Saute until tender, approximately 3 to 4 minutes. Transfer to a plate.
  • Combine eggs with a pinch of salt and pepper in a bowl and whip until fully incorporated.
  • Pour the eggs into the skillet, ensuring they form a complete layer on the bottom. Sprinkle the Cheddar cheese and turkey bacon mixture over the eggs. Cook until the eggs are fully set, approximately 5 minutes. Transfer the omelette onto a plate and serve.
  • Roll the omelette tightly from one edge like a burrito, then slice in half before serving.
