Savory bacon and egg-filled biscuit cups with Cheddar-Monterey Jack cheese - a versatile meal for any time of day!
Ingredients:
  • 6 slices bacon
  • 1 (16.3 ounce) can refrigerated biscuit dough
  • 6 eggs
  • 0.5 cup Borden® Cheddar and Monterey Jack Shreds
  • 3 tablespoons Borden® Cheddar and Monterey Jack Shreds, for topping
Instructions:
  • Preheat oven to 350°F (175°C) to create the perfect cooking environment.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble or chop into small pieces.
  • Divide 6 biscuits into 12 rounds. Press each round into a cup of a muffin tin, shaping into biscuit dough cups along the sides.
  • Combine eggs, crispy bacon bits, and 1/2 cup of shredded cheese in a bowl.
  • Spoon the egg mixture into the biscuit-filled muffin pan, filling them 3/4 full. Sprinkle the remaining 3 tablespoons of cheese on top.
  • Place the dish in the oven to bake until the egg mixture is fully set, which should take around 18 to 22 minutes. Allow it to cool for 5 minutes before serving.
