Bacon and Egg Doughnuts

Chef John's delectable Bacon and Egg Doughnuts: buttery dough with eggs, bacon, deep-fried to perfection.
Ingredients:
  • 1 cup cold water
  • 2 tablespoons cold water
  • 0.5 cup butter
  • 2 tablespoons white sugar
  • 0.25 teaspoon salt
  • 0.125 teaspoon freshly grated nutmeg
  • 1 cup all-purpose flour
  • 0.5 teaspoon vanilla extract
  • 4 large eggs
  • 12 strips bacon, sliced crosswise into 1/2-inch pieces
  • vegetable oil for deep frying
  • 0.25 cup maple syrup, for serving
Instructions:
  • In a saucepan over medium-high heat, combine 1 cup plus 2 tablespoons cold water with butter, sugar, salt, and nutmeg. When mixture begins to simmer, lower heat to medium and add flour. Stir constantly until a soft dough ball forms, for approximately 2 minutes. Take off heat and transfer to a mixing bowl. Add vanilla extract, then break up the dough using a whisk or fork. Allow it to cool for about 5 minutes before using.
  • Add an egg to the dough in the bowl and whisk for 4 to 5 minutes until the egg is fully mixed in and the dough is smooth and sticky. Make sure to clean any dough stuck in the whisk with a spatula before adding the next egg, one at a time. Whisk each egg thoroughly into the dough, clearing the whisk and scraping down the bowl sides as needed. Cover the dough with plastic wrap and chill for about an hour.
  • In a cold skillet, lay out the bacon slices. Cook on medium heat, stirring occasionally, until the bacon is crispy and the fat is rendered, about 5 to 8 minutes. Place the cooked bacon on a paper towel-lined plate to drain excess grease. Once cooled, chop the bacon into small pieces on a cutting board, saving some bits for donut toppings.
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • Take the chilled dough out of the refrigerator and fold in the crispy bacon pieces.
  • Spoon 2 tablespoons of dough into hot oil in batches. Fry until dough starts to puff and brown, turning occasionally. Keep turning until evenly browned, about 7 minutes. Drain on paper towels.
  • Drizzle with warm maple syrup and sprinkle with crispy bacon pieces before serving.
