Bacon and egg pie

Satisfying vegetable-packed pie for an easy mid-week dinner.
Ingredients:
8slicesmulti-grain bread, crusts removed
250g Premium Middle Bacon, rind and fat removed, chopped
1 small brown onion, coarsely chopped
4eggwhites, lightly whisked
4eggs
125.00 ml gratedmozzarella cheese
62.50 ml gratedlight tasty cheese
Steamedsnow peas, to serve
Steamed broccoli, to serve
Steamedcarrot, to serve
Instructions:
Preheat your oven to 180°C. Grease a 3cm deep, 22cm (base) flan or quiche dish. Flatten bread with a rolling pin and line the dish with the bread, making sure to overlap for full coverage. Place the dish on a tray and bake for 10 minutes until the bread is lightly toasted.
In a non-stick frying pan over medium heat, cook bacon, stirring, for 5 minutes. Add onion and continue to cook, stirring, for another 5 minutes until onion is soft.
- Layer half of the bacon mixture onto the bread base.
- Pour the beaten egg whites over the bacon mixture.
- Crack whole eggs over the mixture.
- Sprinkle with the remaining bacon mixture and a mix of mozzarella and tasty cheeses.
- Season with salt and pepper to taste.
Bake pie until eggs are fully set, around 20 minutes. Cut into 4 slices and serve with a side of mixed steamed vegetables.
