Bacon and egg pie

Satisfying vegetable-packed pie for an easy mid-week dinner.
Ingredients:
  • 8 slices multi-grain bread, crusts removed
  • 250g Premium Middle Bacon, rind and fat removed, chopped
  • 1 small brown onion, coarsely chopped
  • 4 eggwhites, lightly whisked
  • 4 eggs
  • 125.00 ml grated mozzarella cheese
  • 62.50 ml grated light tasty cheese
  • Steamed snow peas, to serve
  • Steamed broccoli, to serve
  • Steamed carrot, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 3cm deep, 22cm (base) flan or quiche dish. Flatten bread with a rolling pin and line the dish with the bread, making sure to overlap for full coverage. Place the dish on a tray and bake for 10 minutes until the bread is lightly toasted.
  • In a non-stick frying pan over medium heat, cook bacon, stirring, for 5 minutes. Add onion and continue to cook, stirring, for another 5 minutes until onion is soft.
  • - Layer half of the bacon mixture onto the bread base. - Pour the beaten egg whites over the bacon mixture. - Crack whole eggs over the mixture. - Sprinkle with the remaining bacon mixture and a mix of mozzarella and tasty cheeses. - Season with salt and pepper to taste.
  • Bake pie until eggs are fully set, around 20 minutes. Cut into 4 slices and serve with a side of mixed steamed vegetables.
