Rustic bacon & egg pie

Effortless rustic bacon and egg pie for a delicious meal!
Ingredients:
  • 2 sheets Brand shortcrust pastry, thawed
  • 4 middle bacon rashers, from the deli
  • 235.00 gm light sour cream
  • 275g Brand amoroso tomatoes, halved
  • 6 Brand free range eggs
  • 100g rocket leaves, to serve
Instructions:
  • Preheat your oven to 200C or 180C fan-forced and place 2 trays inside to warm. Microwave bacon on a heatproof plate for 2-3 minutes until it begins to curl.
  • Carefully take out the trays from the oven, coat with cooking oil, and swiftly place pastry on them, folding the edges to create a rim. Top each pie evenly with bacon, sour cream, cheese, and tomatoes. Create a well for cracking 3 eggs into, then bake for 15-20 minutes until eggs are cooked through and cheese is golden. Serve with a garnish of rocket on top.
