Tasty pork pies with a rustic homemade damper crust.
Ingredients:
  • 18.40 gm oil
  • 3 rashers rindless bacon, chopped
  • 4 green onions, sliced
  • 3 cloves garlic, finely chopped
  • 1 bay leaf
  • Salad or vegetables, to serve
  • 187.50 gm self-raising flour
  • 60g butter, diced
  • 128.75 gm milk
  • 40.00 ml parmesan, grated
  • 20.00 ml dried thyme
Instructions:
  • Preheat your oven to 180C and lightly grease 4 ramekins each with a 1-cup capacity.
  • In a large frying pan over medium heat, sauté the bacon, onion, and garlic until tender, about 4-5 minutes.
  • Brown the mince for 4-5 minutes. Stir in the tomatoes and bay leaf. Bring to a boil, then simmer uncovered for 10-15 minutes until the sauce slightly thickens. Season to taste.
  • Sift flour into a bowl, rub in butter until it resembles breadcrumbs, then quickly mix in milk to form a soft dough. Combine parmesan and thyme in a separate bowl.
  • Evenly distribute the mince into ramekins. Split the dough into 4 portions and press over the meat. Sprinkle with the parmesan mixture. Bake for 10-15 minutes. Enjoy with a side of salad or vegetables.
