Cape Breton "pork" pies: Sweet date-filled tarts with maple icing.
Ingredients:
  • 2 cups all-purpose flour
  • 2 tablespoons confectioners' sugar
  • 1 cup unsalted butter, cut into pieces and softened
  • 2.25 cups chopped pitted dates
  • 1 cup water
  • 0.75 cup packed brown sugar
  • 0.25 teaspoon salt
  • 0.25 cup unsalted butter, softened
  • 2.25 cups confectioners' sugar
  • 2 tablespoons milk
  • 1 teaspoon maple extract
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect baking temperature.
  • Prepare the tart shells by sifting flour and confectioners' sugar into a bowl. Mix in butter and knead until well combined. Shape the dough into forty-eight 3/4-inch balls and press each ball into the bottom and up the sides of two 24-cup mini muffin tins to form shells.
  • Bake in the preheated oven for about 16 minutes until pale gold. Remove from the oven and cool in the pans. Gently use a knife to loosen and remove the cooled tarts from the pan.
  • As the tarts are baking, prepare the filling: In a saucepan, bring dates, water, brown sugar, and salt to a gentle boil. Stir constantly and mash the dates with a fork for about 10 minutes. Remove from heat, stir in vanilla, and let the filling cool.
  • Prepare the icing while the filling chills: Combine butter and 1 cup confectioners' sugar in a small bowl, using an electric mixer. Blend in the remaining sugar, milk, and maple extract until smooth and piping consistency is achieved. Transfer the icing to a pastry bag with a small round or star-shaped tip for decorating.
  • Fill tart shells with the delicious filling before elegantly piping a swirl of sweet icing on top of each tart.
