Whip up a delicious breakfast pie using pantry staples for a simple and satisfying family meal.
Ingredients:
  • 375g block frozen puff pastry, thawed
  • 200g creme fraiche or full-fat sour cream
  • 180g cheddar cheese
  • 1 egg, plus 2 egg yolks
  • 2 bacon rashers, chopped
  • 2 tsp fresh thyme leaves
  • Milk, to brush
  • Green salad (dressed with olive oil and balsamic vinegar), to serve
Instructions:
  • Preheat the oven to 200°C. Line a large baking tray with baking paper. Roll out the pastry on a lightly floured surface to a 20cm x 30cm rectangle and transfer it to the prepared tray.
  • Combine creamy creme fraiche, sharp cheese, and rich egg yolks with crispy bacon and fragrant thyme. Finish with a sprinkle of salt and pepper to enhance the flavors.
  • Spread the luscious egg mixture over the pastry, ensuring to leave a tantalizing 2cm border. Give the pastry a gentle brush with a touch of milk to enhance its golden hue, then bake for 15 minutes or until beautifully puffed and gorgeously golden. Once done, slice the pie and pair it with a refreshing salad for a delightful meal.
